Ingredients
  • 2 tbsp oil

  • 1 tsp urad dal

  • 1 tsp chana dal

  • 3–4 garlic cloves

  • 1 medium onion (chopped)

  • 2–3 ripe tomatoes (chopped)

  • Salt to taste

For Tempering
  • 1 tsp oil

  • 1/2 tsp mustard seeds (rai)

  • 6–8 curry leaves

  • 1–2 dry red chillies

Method
  1. Heat oil in a pan. Add urad dal and chana dal, sauté till golden.

  2. Add garlic and onion, cook till soft and slightly golden.

  3. Add tomatoes and cook till completely soft and mushy.

  4. Turn off flame and let mixture cool completely.

  5. Grind into a smooth chutney (add little water if needed).

  6. For tempering, heat oil → add mustard seeds → let them crackle.

  7. Add curry leaves and red chillies.

  8. Pour this hot tadka over the chutney and mix.

🍲 3. Vegetable Sambar (With Imli Water)

Ingredients
  • 2 tbsp oil

  • 3–4 garlic cloves

  • 1 medium onion (chopped)

  • 1 potato (cubed)

  • 1/2 cup lauki (bottle gourd, chopped)

  • 1 drumstick (cut into pieces)

  • 1–2 tbsp sambar masala

  • 1 cup cooked toor dal

  • Salt to taste

  • 1–2 cups water (as needed)

For Imli Water
  • 1 tbsp tamarind (imli)

  • Soak in warm water for 10 minutes and extract pulp

Optional Tempering (Highly Recommended)
  • 1 tsp oil or ghee

  • 1/2 tsp mustard seeds

  • Curry leaves

  • Pinch of hing

Method
  1. Heat Ghee in a deep pan or kadhai.

  2. Add garlic and onion, sauté till fragrant and soft.

  3. Add potato, lauki, and drumstick. Cook for 3–4 minutes.

  4. Add sambar masala and mix well with vegetables.

  5. Add cooked toor dal and water. Mix properly.

  6. Cover and cook till vegetables are soft.

  7. Now add imli water (tamarind pulp) and mix well.

  8. Simmer for 5–7 minutes so flavors blend.

  9. Adjust salt and consistency.

Final Tadka (Optional but elevates taste)
  1. Heat oil/ghee in a small pan.

  2. Add mustard seeds → let them crackle.

  3. Add hing and curry leaves.

  4. Pour this over the sambar.
