Instead of a traditional cream-loaded cake, I created a stunning Glass Fruit Cake made with fresh fruits, orange juice, coconut milk, and coconut water, all set naturally using agar agar. This no-bake, eggless, and vegan-friendly cake is soft, hydrating, toddler-safe, and absolutely beautiful when sliced. It’s the perfect birthday dessert for parents who want a healthier celebration without compromising on the “wow” factor. 🎂 Glass Fruit Cake for My Baby’s 2nd Birthday
(No Maida. No Cream. No Sugar, Jaggery or Dates. Just Love, Colours & Fresh Fruits.)
When your baby turns two, you don’t just want a cake.
You want a memory.
This year, instead of a heavy cream-loaded cake, I made something light, colourful, and absolutely magical — a Glass Fruit Cake.
It looks like stained glass.
It slices like jelly.
And it tastes like fresh fruit heaven.
And the best part?
It’s made with orange juice, coconut milk, coconut water, and fresh fruits. No oven needed.
🌈 Why I Chose This for a 2-Year-Old
At two years old:
Toddlers love colours.
They love soft textures.
They don’t need heavy sugar.
This cake is:

🛒 Ingredients
🍓 Fresh Fruits
Use colourful fruits like:
Kiwi
Strawberry
Mango
Dragon fruit
Pomegranate
Blueberries
Persimmon
Grapes
Pineapple
Cut into small toddler-friendly cubes.
🥥 Liquid Layers
1 cup Fresh Orange Juice
1 cup Coconut Milk
2 cups Coconut Water
3 tbsp Agar Agar powder
Sugar (Optional), I did not add
👩🍳 How I Made It
🍊 Layer 1 – Orange Base
Boil orange juice + 1 tbsp agar agar for 2–3 minutes.
Pour into mould. Let it semi-set.
🥥 Layer 2 – Coconut Cream Layer
Boil coconut milk + 1 tbsp agar agar.
Pour gently over orange layer.
Let it slightly set, then add chopped fruits.
💧 Layer 3 – Coconut Water Glass Layer
Boil coconut water + 1 tbsp agar agar.
Pour slowly over fruits.
Add more fruits for that beautiful floating effect.
Fill mould fully.
Refrigerate for 1–2 hours.
Unmould carefully.
🎉 Birthday Presentation Idea
Add a cute “2” topper.
Surround with balloons.
Cut slowly so fruits sparkle through the transparent layer.
Capture that slice moment on video.
Trust me… the slow-motion cut is EVERYTHING.
👶 Toddler-Friendly Tips
Avoid hard fruits (like apple chunks).
Keep fruit pieces small.
Use mildly sweet orange juice.
You can add sugar during boiling contents. BUT
Skip extra sugar — fruits are enough.
