🧁 Carrot, Beetroot & Paneer Stuffed Appe
(With Fermented Rice Batter)
✨ Ingredients:
For the Batter:
1 cup rice (idli or any short grain)
1/4 cup urad dal (split black gram)
1 tbsp poha (flattened rice, optional)
Salt to taste
For the Stuffing:
1/2 cup grated carrot
1/4 cup grated beetroot
1/2 cup crumbled or grated paneer
🔁 Steps:
Step 1: Make the Batter (Prepare Ahead)
Soak rice, urad dal, and poha together for 4–5 hours.
Grind into a thick, smooth batter using minimal water.
Add salt and let it ferment overnight (8–10 hours). The batter should rise and have a mild sour smell.
Step 2: Make the Stuffing
Steam the carrot and beetroot until soft (about 5–7 minutes).
Mash them well with a fork or masher.
Mix in the paneer until you get a soft, colorful mash.
(Optional: Add a pinch of cumin powder or lemon juice for flavor.)
Step 3: Cook the Appe
Heat an appe pan and grease with a little ghee.
Spoon a little batter into each mold.
Add a spoonful of the stuffing in the center.
Add mustard seeds and let it splutter.
Cover with a little more batter.
Cook covered on low-medium flame until golden, flipping halfway through.
🍶 Homemade Mayo (Eggless & Oil-Free)
This creamy homemade mayo is made from paneer and cashews – no egg, no oil, just simple goodness.
✨ Ingredients:
1/2 cup fresh paneer
8–10 soaked cashews (soak for 15–20 mins)
1–2 small garlic cloves (optional for babies)
1 tbsp lemon juice
Salt to taste
4–6 tbsp water (adjust consistency)
🔁 Steps:
Add paneer, soaked cashews, garlic, lemon juice, salt, and water to a blender.
Blend until smooth and creamy.
Taste and adjust salt or lemon as needed.
Store in the fridge for 3–4 days in a clean jar.
🍈 Fresh Muskmelon Fingers
Sometimes, simple is best. Muskmelon is hydrating, cooling, and naturally sweet.
✨ How to Serve:
Wash, peel, and cut the muskmelon into thick fingers (about the size of baby’s palm).
Chill slightly before serving for a refreshing treat.
Always supervise while eating fruits — though muskmelon is soft, big pieces are safest for BLW.
🍽️ Final Plating Idea:
Serve 3–4 warm stuffed appe
Add a small bowl of the homemade mayo as a dip
Place 3–4 juicy muskmelon fingers on the side
This plate is:
✅ Toddler-approved
✅ Colorful and inviting
✅ Easy to make ahead
✅ Totally nourishing
🧡 Pro Tip for Busy Moms:
Make the batter and mayo ahead of time. You can also pre-steam and mash the veggies for stuffing and keep it ready in the fridge for a next-day breakfast or lunchbox addition.
👶 For Babies (8–10 months+)
You can offer this meal if:
Your baby has been introduced to individual ingredients like paneer, carrot, beetroot, rice, and cashew.
Your baby is comfortable with soft finger foods and is doing well with Baby-Led Weaning (BLW) or mashed textures.
Modifications:
Ensure appe are very soft and cut into strips or bite-sized halves.
Skip garlic in mayo if baby hasn't had it before.
Make sure cashews are blended completely smooth in the mayo.
Use fresh paneer (homemade is best for softness).
Offer muskmelon fingers that are ripe, seedless, and soft.
✅ Great for snack time or a mini-meal.
👧 For Toddlers (12 months+)
Serve as-is! It’s a complete and balanced meal.
Great for lunchboxes, playdates, or even travel food.
